Our current situation + Evan's graduation pics.

Evan walked at the end of the summer semester, but won't officially get his BS in Exercise Science until this next January, after he completes his internship (which he is currently doing, along with working.)
He is interning at a PT clinic here in Rexburg, most conveniently located across the street from his place of employment! He is super busy, and doesn't get any down time all day because as soon as his shift at work ends, his internship begins, or vice versa. He's working harder than I've ever seen before, and I am so proud of him.
We will be staying in Rexburg until at LEAST next August, because a) that is when our current apartment contract ends, and, consequently b) I start my new promotion next week (Restaurant General Manager! woohoo!) and when I accepted, I promised to stay until then. Neither of us mind too much, though. Evan is actually quite ecstatic about the opportunity we have to continue working and saving money. I was a little bummed, but the new promotion made me more excited. It's strange, it seems that as far as certain routines go, I really hate change. But in this situation, I think it was the fact that this next year of work would be different than the previous is what made me not grumble about staying. It may also be that this particular change will allow me to learn and grow even more, which is something that I ALWAYS enjoy.
sidenote: I feel that most people would not think much of working at a fast food restaurant, even if it was in a managerial position, but I can honestly say that I really enjoy my job! Which may be more than a lot of people can say, so I feel really lucky. It's been so nice to work in a place where I can learn more about myself, both personally and professionally, meet new people, and have a good support system from the people above me. It's been an awesome experience, as well as a major blessing.
 

I spent about 2 months preparing for our families to stay with us. Mostly planning meals, because I didn't want us to have to go out as a huge group, nor expect everyone to spend money on a meal when I could easily just make the meals. They were here less than 3 days, but I have discovered that I LOVE being a hostess, and this was the largest amount of people I had ever had the opportunity to host, so I really wanted to make sure I was prepared. I love love LOVE cooking for people, and since all of us (me and Evan, his parents, my family that came) eat pretty similarly (little to no meat or dairy) it was fun showing them some of my favorite vegan recipes without them thinking I was crazy, or worse, not liking it! I even made this dessert, and everybody loved it! Even people who might have not necessarily wanted to eat it had they known what the ingredients were... :)
